A Refreshing Daily Ritual: Brew an AIP Friendly Matcha Latte

As I navigate through some autoimmune issues, I have been experimenting with eating more autoimmune protocol (AIP) to determine if certain foods worsen my symptoms.

In the meantime, I enjoy the ritual of starting my day with an intentional beverage, preferably tea or coffee.

There is something about slowing down, savoring a cup of tea or coffee, that helps me feel grounded and centered for the day.

I have been gradually reducing my caffeine intake for almost 6 years. I was completely caffeine-free for 5 years, but I still find myself feeling constantly tired. Matcha, despite containing caffeine, seems to have a lesser crash effect when consumed.

This AIP-friendly matcha latte has quickly become one of my favorite ways to start the morning, especially during the summer. I sometimes have another one in the afternoon.

The addition of coconut milk provides some healthy fats and satiety. Local honey may help alleviate allergies for those who struggle with them.

Recipe

  • ⅓ cup of hot water
  • 1 tsp organic matcha powder. I use this one
  • 1 cup of milk of your choice. I use coconut milk since it’s AIP friendly. I alternate between this one and this one depending on what is available.
  • Squeeze of organic local honey to taste
  • Ice to taste if you like it cold
  • Straw for vibes. I like a bendy metal one for some reason.  

Instructions

  • Add matcha powder to hot water and whisk together. I know a lot of people use a bamboo whisk like this one. We have this one that we also use to froth milk and it works great. 
  • Add milk of your choice
  • Squeeze in a generous amount of local honey to taste
  • Stir, add ice to your liking, and enjoy!
